Blackened Spice with Shrimp

YIELD 4 servings ZEST FACTOR Hot

This spice mix is great to have on hand for easy mid-week dinners and can also be used on fish and chicken to add loads of flavor and heat without any additional fat. Blackening is particularly great for outdoor grilling as it produces a good amount of smoke.

14        cup paprika
2         
tablespoons garlic powder
1          
teaspoon dried thyme
1          
teaspoon dried oregano
2         
tablespoons salt
2         
teaspoons black pepper
2         
teaspoons cayenne pepper
2         
teaspoons corn oil
1          
pound large shrimp , peeled and deveined

Mix spices in a bowl. Heat a large skillet, preferably cast iron, on high heat for 10 minutes or until smoking hot. Lay shrimp out on a baking sheet and coat evenly with about 2 teaspoons of corn oil. Heavily season shrimp on both sides with the spice mixture.

Place shrimp in the heated skillet and cook over high heat for 30 to 45 seconds on each side until cooked through.
