Grilled NY Strips with Monkeygland Sauce

Don’t worry: No monkeys or their glands will be harmed when whipping up this spicy/sweet piquant relish that’s simply built to pair with a juicy steak fresh off the grill.
1 Tablespoon extra-virgin olive oil, plus two tablespoons
1 Medium-sized onion, diced
2 Cloves garlic, minced
1⁄2 Cup canned tomato sauce
1⁄4 Cup chili sauce
2 Tablespoons Worcestershire sauce
1⁄2 Cup spicy fruit chutney such as mango chutney
2 Tablespoons brown sugar
1 Tablespoon cider vinegar
1 Teaspoon dried mustard
1 Teaspoon Sambal Oelek*
4 Boneless NY strip steaks (cut 1 1/4-inch thick)
Coarse sea salt and freshly
ground pepper
Brush steaks generously with remaining two tablespoons of olive oil and season generously on both sides with salt and pepper. Grill steaks on each side until you reach your desired doneness (5–7 minutes for medium-rare). Serve steaks with a drizzle of sauce. Pour any remaining sauce into a small bowl to serve on the side.
*Sambal Oelek is an Indonesian red chili paste infused with garlic and vinegar and can be found at most Asian grocery stores.
