Boozy Bacon Brittle


Candy making can be tricky without a lot of practice, so a candy thermometer will be your best friend here. The good news: Even if the results don’t come out as expected the first time, they’ll still be tasty!

YIELD 10–12 servings
PREP TIME 1–2 hours
COOK TIME 30 minutes

3 cups sugar
1½ cups water
6 slices bacon, cooked and crumbled
1 cup chopped, lightly salted nuts of your choice
2 tablespoons bourbon
1 tablespoon bacon grease
1 teaspoon vanilla
½ teaspoon ground cayenne
½ teaspoon ground cinnamon

1. In a heavy-bottomed sauce pot over high, add the sugar and water. Stir to combine and bring to a boil for 3–5 minutes. (After the mixture starts to boil, there’s no need to stir anymore.)
2. Reduce the heat to medium-high. Let the sugar caramelize until it reaches an amber color, about 10–15 minutes (or 295°F–300°F on a candy thermometer).
3. Once the sugar changes color, remove from the heat and quickly add the remaining ingredients. Stir to combine.
4. Transfer the brittle mixture to a parchment-lined tray. Use a spatula to spread the mixture into a thin layer. Place the tray in the freezer for 20–30 minutes to help the brittle set faster before cracking it into pieces. Store in an airtight container for up to 2 weeks.
