Crawfish and Andouille Mac and Cheese

Boxed macaroni and cheese has evolved into its own food category; just take a look at the many options lining grocery store shelves. Here, we opted for a box of white cheddar with garlic and herbs, but any will do.

YIELD 4–6 servings
ZEST FACTOR Mild
PREP TIME 5 minutes
COOK TIME 20 minutes

1 (11.9-ounce) box mac and cheese
1 tablespoon butter
1 jalapeño, seeded and minced
½ shallot, minced
½ cup diced andouille
½ cup chopped crawfish tails
¼ cup crushed butter-flavored crackers

1. Preheat the oven to broil.
2. Cook the mac and cheese in a pot of boiling, salted water per package instructions.
3. Melt the butter in a pan over medium-high. Add the jalapeños, shallots, sausage and crawfish and sauté for 3–4 minutes.
4. Transfer the mac and cheese mixture to a casserole dish and mix to combine. Top with the crushed crackers. Broil for 3–4 minutes, or until golden brown. Serve hot.
