Green Chile Sloppy Joe Pasta

8 ounces penne
1 pound ground beef
1 onion, diced, plus more minced for garnish
1 (1.31-ounce) packet sloppy joe mix
1 cup water
1 (4-ounce) can chopped green chiles
1 (6-ounce) can tomato paste
¼ cup shredded sharp cheddar plus more for garnish
Chopped parsley for garnish

1. Cook the pasta according to package instructions. Drain and set aside.
2. Meanwhile, in a skillet over medium, cook the beef and onions until the meat is done. Drain the grease and return the pan to the stove.
3.  Stir in the remaining ingredients, except the parsley, and bring to a boil. Reduce the heat and simmer for 5–10 minutes.
4. Add the pasta and stir to combine. Serve garnished with the onions, cheese and parsley.
