Hot Italian Sausage–Gnocchi Soup


Perfect for chilly evenings, the combo of spicy sausage, healthful kale and delicate potato pillows will warm you up with each delectable spoonful. Another bonus: This dish is ready in a snap.

YIELD 6–8 servings
PREP TIME 10 minutes
COOK TIME 35 minutes

1 pound ground hot italian sausage
1 large onion, diced
3 cloves garlic, minced
1 tablespoon extra-virgin olive oil
2 cups water
3 cups chicken broth
2 teaspoons red pepper flakes
2 cups kale, torn into bite-size pieces
1 cup heavy cream
1 (16-ounce) package gnocchi
½ cup grated Parmesan cheese

1. In a large stockpot over medium heat, brown the sausage. Once cooked, remove them and drain on paper towels.
2. In the same pot, sauté the onions and garlic, about 10–12 minutes.
3. Pour the water and broth into the pot. Bring to a boil, then reduce the heat to a simmer. Add the sausage, pepper flakes, kale, cream and gnocchi. Simmer for 10–12 minutes, allowing the flavors to marry.
4. Ladle the soup into bowls and top with a little (or a lot of) freshly grated Parmesan cheese.
