you’re at it? Served with a soft-boiled egg, this dish will brighten up any morning.

1 pound ground turkey
1½ teaspoons red pepper flakes
salt and pepper to taste
2 cups old-fashioned oats
2 cups water
1 (15.5-ounce) can coconut milk
1 teaspoon red pepper flakes
1 teaspoon ground turmeric
½ teaspoon ground ginger
½ teaspoon curry powder
Salt and pepper to taste
4 cups mixed greens (like spinach and arugula)
4 soft-boiled eggs
1. In a skillet over medium, brown the sausage until fully cooked, about 10 minutes. Season with the pepper flakes, salt and pepper.
2. In a saucepot over high, combine the oats, water and coconut milk. Bring to a boil, then reduce to a simmer. Stir in
the spices and season with salt and pepper. Cook for 10–15 minutes, until the oats are cooked to your desired doneness.
3. Add the spinach and cook for another 2–3 minutes, until the spinach wilts.
4. Serve the oatmeal with the sausage and soft-boiled eggs.
