Portobello Jalapeño White Bean Burgers


Baby bellas aren’t just good for you (they’ve been found to help reduce the risk of cardiovascular disease as a result of the high levels of conjugated linoleic acid they contain), but they also make for an almost meat-like texture. For this recipe, we incorporated cannellini beans, rich in B vitamins, and topped it all off with some guacamole to make these burgers irresistible for even the skeptics
out there.

1 (15-ounce) can cannellini beans, drained, rinsed and mashed
2 cups baby bella mushrooms, chopped
2 jalapeños, seeded and minced
½ cup red onions, minced
2 tablespoons minced garlic
1 tablespoon steak seasoning
1 tablespoon Worcestershire
3 eggs, beaten
½ cup panko
¾ cup shredded pepper jack
buns for serving
Your favorite toppings like guacamole for garnish

1. Combine all the ingredients in a bowl. Form the mixture into 6 patties.
2. Coat a skillet with nonstick spray and warm over medium-high. Place the patties in the skillet and cook for 3–5 minutes. Flip and cook for 5 more minutes.
3. Serve on buns with your favorite toppings.
