These fritters get a nice crispy crust while maintaining a softer noodly texture on the inside, which is bursting with fresh scallion flavor.

1 (3-ounce) package instant ramen noodles, broken into large chunks
6 scallions, thinly sliced
1 cup matchstick carrots
2 tablespoons sriracha
¼ cup flour
1 egg, beaten
2 tablespoons vegetable oil
1. Cook the noodles and seasoning in boiling water for 3 minutes, then drain.
2. Combine the noodles with the remaining ingredients except the oil in a bowl, mixing well.
3. Warm the oil in a large nonstick skillet over medium-high. Working in batches, place 2 tablespoons ramen mixture in the pan and lightly flatten with a spatula. Cook for 2–3 minutes per side, until golden brown and crispy.
4. Drain on a paper towel–lined plate and serve warm.
