Spicy Black Bean Burgers with Cilantro Guacamole


Beans are a nutritional powerhouse, brimming with filling fiber and protein, plus important nutrients like iron and B vitamins. Even our resident meat eaters gobbled up this burger; Meatless Monday, anyone?

For the burgers:
2 (14.5-ounce) cans seasoned black beans, drained
1 cup plain breadcrumbs
½ red onion, diced
1 clove garlic, minced
¼ cup chopped cilantro
1 jalapeño, diced
½ teaspoon chile powder
3 tablespoons mayonnaise or Greek yogurt
hot sauce to taste
1 egg
1 tablespoon extra-virgin olive oil
6 whole-wheat buns

For the cilantro guacamole:
1 avocado, chopped
1 jalapeño, diced
½ red onion, diced
½ lime, juiced
¼ cup chopped cilantro
1 tablespoon low-fat mayonnaise or Greek yogurt
salt to taste

1. Make the burgers: Place the beans in a bowl and mash them with a fork. Mix well with the breadcrumbs, onions, garlic, cilantro, jalapeño, chile powder, mayo, hot sauce and egg, then shape into patties a little bit larger than the buns.
2. Brush each pattie with olive oil and grill them for 5 minutes over medium-high heat.
3. Make the guacamole: Gently combine all the ingredients in a bowl. Chill in the fridge until ready to eat.
4. To serve, place the patties on the buns and top with your favorite toppings or the Cilantro Guacamole.
