Watermelon “Pizza”


Use the recipe below as a jumping-off point, and add your favorite fruits for the topping. The whipped cream is infused with pink peppercorn, which adds a mild, fruity bite that works beautifully here.

For the whipped cream:
2 cups heavy cream
¼ cup sugar
½ tablespoon ground pink peppercorns
2 tablespoons rum

For the “pizza”:
2 (1-inch-thick-round) slices seedless watermelon
1 banana, sliced
1 cup sliced strawberries
½ cup blueberries
½ cup blackberries
Mint for garnish

1. Make the whipped cream: Combine the cream, sugar and pepper in a large bowl. Whisk together until stiff peaks form. Fold in the rum and set aside.
2. Make the “pizza”: Spread the whipped cream on the watermelon. Top with the fruits and garnish with the mint. Chill or cut into slices and serve immediately.
